How to make Farmer’s Casserole

YOU’LL NEED:

6 slices of diced bacon.

6 C.Of diced potatoes.

2 -sliced- green onions.

2 MEDIUM cans of fat-free evaporated milk.

2 C.Of egg beaters egg substitute.

1 C. And Half Of “reduced-fat“ Monterrey blend cheese.

1 TBSP.Of extra virgin olive oil.

1/2 TSP.Of SEA salt.

1/2 TSP.Of black pepper.

DIRECTIONS:

Step 1:

Heat the oil in a non-stick skillet over medium heat and cook the potatoes until they are light brown.

Step 2:

Put the casserole with the potatoes.

Step 3:

Place the ham, cheese, and green onions on top.

Step 4:

In a big tub, add the egg-beaters, evaporated milk, salt, and pepper until well mixed.

Step 5:

Pour the potato mixture over.

Step 6:

Bake for 40 to 45 minutes in a preheated oven at 375°F.

Let 15 equal portions be set before cutting. Serve it hot.
